Pecan Pie Muffins

I love pie.

I love all kinds of pie. I will never turn down a slice of homemade pie. But if I had to choose my absolute favorite pie, it would be Pecan Pie. It is the mother of all pies. Of course, if you ask my hubby, the Apple Pie is the mother of all pies. We just agree to disagree. Apple comes in a very close second for me.

So when you can take the flavors of a pecan pie and put them into other baked goods, then I am all over it! I mean, I love pecans in general but you go and put them into something sweet and I am in heaven. And these muffins are deceptively easy but outta this world good. I ain’t even kidding. You are gonna look and see 5 ingredients and think, they can’t be that good. But I’m gonna tell ya, you would be wrong to assume that about this muffin.

They are good and sweet and did I mention good? Well, better than good. Outstanding! They truly taste like a pecan pie that has been made into a muffin. Now, these are more like dessert muffins and not so much like breakfast muffins. They are slightly dense and taste wonderful warm or at room temperature. Make them. Eat them. You won’t regret you did!

Ingredients :

1 cup of chopped pecans.
1 cup of firmly packed brown sugar.
½ cup of flour.
2 large eggs.
½ cup of melted butter.

Instructions :

Preheat the oven to 350° and place foil-baking cups in muffin pans.

In a large bowl, mix together the pecans, brown sugar and flour.

Beat the eggs very well and mix in the butter. Pour the eggs over the dry ingredients and mix to combine.

Spoon the batter into cups ⅔ full and bake for 20 to 25 minutes.

Transfer to wire racks immediately after baking.
