Double Chocolate Coca Cola Cake

Who knew that putting Coca Cola in a cake would make an absolutely delicious cake?! I was a skeptic at first, but now I am a believer. This cake is so easy, so delicious, and you probably should have others around to help you eat it! I had to explain to my kids that, yes, I ate a fourth of the cake by myself. In one hour. Luckily, they laughed and took several pieces and I didn’t feel bad at all!

Ingredients:

Cake

1 cup of coca cola.
½ cup of oil.
1 stick of butter.
3 tbsps of cocoa.
2 cups of sugar.
2 cups of flour.
½ tsp of salt.
2 eggs.
½ cup of buttermilk.
1 tsp of baking soda.
1 tsp of vanilla.

Frosting

1 stick of butter.
3 tbsps of cocoa.
6 tbsps of cream or milk.
1 tsp of vanilla extract.
3 ¾ cups of confectioners’ sugar.

Directions:

Preheat the oven to 350° degrees Fahrenheit.

Grease and flour a 13×9 baking pan.

Bring to a boil the coca cola, oil, butter, and cocoa in a saucepan.

In a bowl, mix together the sugar, flour and salt then pour the boiling cola mixture over the dry ingredients and beat until well combined.

Mix in the eggs, buttermilk, soda and vanilla until well combined.

Pour the batter into the baking pan and bake for 20 to 25 minutes.

Let cool for 10 minutes before frosting.

Heat the butter, cocoa, and milk in a saucepan.

Remove from heat, stir in the vanilla, and then mix in the powdered sugar until smooth.

Spread over the cake while still warm.
